Marc Capichioni, who had a 25-year career in IT but spent a summer bartending at the Hard Rock Cafe at Yankee Stadium, had a dream of opening a bar. Dave Pearl, who spent 23 years in law enforcement, wanted to open a beer garden. And Peter Martine, a longtime home brewer who brewed commercially in Colorado, just wanted a place to brew beer. Serendipity brought them together — the first two are old friends who had been talking about opening a place when they met Martine — and now the three (plus Capichioni's wife Sarah) are about to open Argonne Rose Brewing Co., a gastropub in St. George’s Church in Mohegan Lake.
The space, which dates to 1919 and most recently was The Winery at St. George, will have a grand opening Dec. 31.
